
Korean BBQ Tacos
Gochujang-marinated bulgogi beef with kimchi slaw and sesame.
Ingredients
- 1.5 lb ribeye or short rib, thinly sliced
- 1/4 cup soy sauce
- 2 tbsp gochujang
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 4 cloves garlic
- 1 pear, grated
- 1 cup chopped kimchi
- Scallions, sesame seeds
- Corn tortillas
- Sriracha mayo
Instructions

Whisk soy sauce, gochujang, brown sugar, sesame oil, garlic and grated pear into a marinade.

Marinate the beef 2 to 4 hours.

Sear in a screaming-hot skillet in batches, 2 minutes per batch.

Warm the tortillas.

Fill with beef, chopped kimchi, scallions, sesame seeds and sriracha mayo.
