Crockpot Carnitas

Set-it-and-forget-it pork shoulder that slow cooks all day, then crisps under the broiler for classic carnitas edges.

Ingredients

  • 4 lb pork shoulder, cut into large chunks
  • 1 orange, juiced (keep the halves)
  • 1 onion, quartered
  • 6 garlic cloves
  • 2 tsp cumin
  • 2 tsp oregano
  • 1 tsp chili powder
  • 2 bay leaves
  • 1 tbsp salt
  • Corn tortillas, onion, cilantro, salsa to serve

Instructions

    Season pork with salt, cumin, oregano and chili powder.

    Add pork, onion, garlic, bay leaves, orange juice and the squeezed orange halves to the slow cooker.

    Cook on low 8 hours (or high 5) until the pork shreds with a fork.

    Shred the meat and discard bay leaves and orange halves.

    Spread on a sheet pan, spoon over some cooking liquid, and broil 5-7 minutes until edges crisp.

    Serve on warm tortillas with onion, cilantro and salsa.
