
Instant Pot Birria
Rich chile-braised beef and dipping consomme in about an hour instead of all afternoon.
Ingredients
- 3 lb chuck roast, cubed
- 4 guajillo chiles, stemmed and seeded
- 2 ancho chiles
- 2 chiles de arbol
- 1 onion, halved
- 5 garlic cloves
- 2 tomatoes
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp cinnamon
- 2 tbsp vinegar
- 3 cups beef broth
- Salt to taste
- Corn tortillas, Oaxaca cheese, onion, cilantro
Instructions

Toast the dried chiles in the pot on saute for 1 minute, then cover with hot broth and soak 10 minutes.

Blend chiles with tomatoes, onion, garlic, spices, vinegar and 1 cup broth until smooth; strain.

Season beef with salt and sear in the pot on saute.

Add the chile sauce and remaining broth, seal, and pressure cook on high 45 minutes.

Natural release 15 minutes, then shred the beef and skim the fat from the consomme.

Dip tortillas in the fat, griddle with cheese and beef, and serve with consomme for dunking.
