
Instant Pot Shredded Beef Tacos
Fork-tender chuck roast with deep chipotle flavor, pressure cooked in about an hour.
Ingredients
- 3 lb chuck roast, cut in 4 pieces
- 1 onion, sliced
- 4 garlic cloves, minced
- 2 chipotles in adobo, chopped
- 1 tbsp adobo sauce
- 1 tsp cumin
- 1 tsp oregano
- 1 1/2 cups beef broth
- 2 tbsp oil
- Salt and pepper
- Tortillas, onion, cilantro, lime
Instructions

Season beef generously with salt and pepper.

Sear the pieces in oil on saute until browned on both sides; remove.

Saute onion and garlic 2 minutes, then deglaze with broth, scraping the bottom.

Return beef with chipotles, adobo, cumin and oregano; seal and cook on high 55 minutes.

Natural release 15 minutes, shred the beef, and stir it back into the juices.

Serve on warm tortillas with onion, cilantro and lime.
