
Slow Cooker Chicken Tacos
Five minutes of prep in the morning, shredded taco chicken by dinner. The weeknight workhorse.
Ingredients
- 2 lb boneless chicken thighs or breasts
- 1 cup salsa
- 1 tbsp taco seasoning
- 1 tsp cumin
- Juice of 1 lime
- 1/2 tsp salt
- Tortillas, pico de gallo, cheese, cilantro to serve
Instructions

Place chicken in the slow cooker and season with taco seasoning, cumin and salt.

Pour salsa over the top.

Cook on low 6 hours or high 3 hours.

Shred with two forks directly in the pot and stir into the juices.

Add lime juice and let it sit 10 minutes to soak up the sauce.

Pile into warm tortillas with pico, cheese and cilantro.
