Carnitas Tacos

Pork shoulder slow-braised in its own fat until tender, then crisped under the broiler.

Ingredients

  • 4 lb pork shoulder, cubed
  • 1 cup lard or neutral oil
  • 1 orange, halved
  • 1 onion, quartered
  • 6 cloves garlic
  • 2 bay leaves
  • 1 tbsp salt
  • 1 tsp oregano
  • Corn tortillas, onion, cilantro, lime

Instructions

    Place pork, lard, orange halves, onion, garlic, bay leaves, salt and oregano in a heavy pot.

    Simmer gently on low for 2.5 to 3 hours until fork-tender.

    Remove pork and shred into large pieces.

    Spread on a sheet pan and broil 5 minutes until edges crisp.

    Serve on warm tortillas with onion, cilantro and lime.
