
Lengua Tacos
Beef tongue simmered until silky, then diced and seared for crisp edges.
Ingredients
- 1 beef tongue (about 3 lb)
- 1 onion, halved
- 6 cloves garlic
- 2 bay leaves
- 1 tbsp salt
- 1 tbsp peppercorns
- Oil for searing
- Corn tortillas, onion, cilantro, salsa verde
Instructions

Simmer the tongue with onion, garlic, bay leaves, salt and peppercorns for 3 hours until tender.

Cool slightly, then peel off the outer skin.

Dice the meat into small cubes.

Sear in hot oil until the edges crisp.

Serve on warm tortillas with onion, cilantro and salsa verde.
