
Chorizo Tacos
Crumbled Mexican chorizo cooked until deeply browned and spooned into warm tortillas.
Ingredients
- 1 lb fresh Mexican chorizo, casings removed
- 1 small onion, diced
- 2 cloves garlic, minced
- Corn tortillas
- Queso fresco
- Onion, cilantro, lime
- Salsa roja
Instructions

Cook the chorizo in a dry skillet over medium heat, breaking it up as it renders, about 10 minutes.

Add the onion and garlic and cook 5 minutes more until soft.

Drain excess fat if desired.

Warm the tortillas.

Fill and top with queso fresco, onion, cilantro, lime and salsa roja.
