
Al Pastor Tacos
Marinated pork with achiote and pineapple, shaved off the trompo onto warm corn tortillas.
Ingredients
- 2 lb pork shoulder, thinly sliced
- 3 dried guajillo chiles
- 2 chipotles in adobo
- 1/4 cup pineapple juice
- 2 tbsp achiote paste
- 4 cloves garlic
- 1/4 cup white vinegar
- 1 tsp cumin
- Fresh pineapple slices
- Corn tortillas, onion, cilantro, lime
Instructions

Toast and soak the guajillo chiles in hot water for 15 minutes.

Blend chiles with chipotles, pineapple juice, achiote, garlic, vinegar and cumin into a smooth marinade.

Coat the pork and marinate at least 4 hours or overnight.

Stack the pork on a vertical spit or press into a loaf pan and roast at 400F for 45 minutes.

Sear pineapple slices and chop.

Shave the pork thin, chop, and serve on warm tortillas with pineapple, onion, cilantro and lime.
