
Barbacoa Tacos
Chile-braised beef cheek or chuck, cooked low until it falls apart.
Ingredients
- 3 lb beef chuck or cheek
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, quartered
- 6 cloves garlic
- 2 chipotles in adobo
- 1 tbsp cumin
- 2 bay leaves
- 2 cups beef broth
- Corn tortillas, onion, cilantro, lime
Instructions

Toast and soak the dried chiles 15 minutes.

Blend chiles with onion, garlic, chipotles, cumin and 1 cup broth.

Sear the beef in a dutch oven, then add the sauce, remaining broth and bay leaves.

Cover and braise at 300F for 3.5 to 4 hours until shreddable.

Shred the beef and moisten with the braising liquid.

Serve with onion, cilantro and lime.
