
Cochinita Pibil Tacos
Yucatan achiote-and-sour-orange pork, traditionally wrapped in banana leaf and slow-roasted.
Ingredients
- 4 lb pork shoulder, cubed
- 3 oz achiote paste
- 1 cup sour orange juice (or 2/3 orange + 1/3 lime)
- 6 cloves garlic
- 1 tsp cumin
- 1 tsp oregano
- Banana leaves
- Salt
- Pickled red onion
- Habanero salsa
- Corn tortillas
Instructions

Blend the achiote, sour orange juice, garlic, cumin, oregano and salt into a marinade.

Marinate the pork overnight.

Line a dutch oven with banana leaves, add the pork and marinade, and fold the leaves over.

Cover and roast at 300F for 4 hours until falling apart.

Shred the pork in its juices.

Serve with pickled red onion and habanero salsa.
