
Tacos de Chicharrón
Crisp pork skin simmered in a smoky tomato-chile sauce until tender and intensely flavorful.
Ingredients
- 8 oz pork chicharrón
- 4 Roma tomatoes
- 2 guajillo chiles
- 1/2 white onion
- 2 garlic cloves
- 1 cup chicken stock
- Corn tortillas
- Diced onion and cilantro
Instructions

Toast and soak the guajillo chiles.

Blend chiles with tomatoes, onion, garlic and stock.

Simmer the sauce 10 minutes, then add chicharrón.

Cook until softened but still textured; serve in tortillas with onion and cilantro.
