
Quesabirria Tacos
Birria with melted cheese, griddled until the tortilla is red and crisp.
Ingredients
- Shredded birria beef (see birria recipe)
- Reserved birria fat and consomme
- 3 cups shredded Oaxaca or mozzarella
- Corn tortillas
- Onion, cilantro, lime
Instructions
- 1
Skim the red fat from the birria consomme.
- 2
Dip each tortilla in the fat and lay on a hot griddle.
- 3
Add cheese to one half, then birria beef, onion and cilantro.

Fold and griddle 2 to 3 minutes per side until crisp and the cheese melts.

Serve with lime and a cup of consomme for dipping.
