
Tacos Gobernador
Sinaloa-style griddled shrimp and cheese tacos with peppers and tomato.
Ingredients
- 1 lb shrimp, chopped
- 1 poblano, diced
- 1 tomato, diced
- 1/2 onion, diced
- 2 tbsp butter
- 2 cups shredded Chihuahua or Monterey Jack
- Flour or corn tortillas
- Lime, salsa
Instructions

Saute the onion and poblano in butter until soft, about 5 minutes.

Add the tomato and cook 3 minutes.

Add the shrimp and cook 2 to 3 minutes until just pink. Season.

Place a tortilla on a hot griddle, add cheese, then the shrimp mixture.

Fold and griddle until the cheese melts and the tortilla crisps.

Serve with lime and salsa.
