
Birria Tacos with Consomme
Chile-braised beef tacos griddled in fat and served with a cup of consomme for dipping.
Ingredients
- 3 lb beef chuck
- 4 guajillo chiles
- 3 ancho chiles
- 2 chiles de arbol
- 1 onion
- 6 cloves garlic
- 2 tbsp vinegar
- 1 tsp cinnamon
- 1 tsp cumin
- 2 bay leaves
- 4 cups beef broth
- Corn tortillas, onion, cilantro
Instructions

Toast and soak all the chiles 15 minutes.

Blend chiles with onion, garlic, vinegar, cinnamon and cumin.

Sear the beef, add the chile sauce, broth and bay leaves.

Braise covered at 300F for 3.5 hours until shredding tender.

Shred the beef and skim the red fat off the broth.

Dip tortillas in the fat, griddle with beef, fold and crisp.

Serve with onion, cilantro and a cup of consomme.
