
Tacos Arabes
Puebla specialty — spit-roasted pork served on pita-like pan arabe with chipotle sauce.
Ingredients
- 2 lb pork shoulder, thinly sliced
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp thyme
- 4 cloves garlic
- 2 tbsp lemon juice
- Pan arabe or small pita breads
- Chipotle salsa
- Onion, lime
Instructions

Marinate the pork with oil, cumin, oregano, thyme, garlic, lemon juice and salt for 2 hours.

Stack on a vertical spit or roast in a loaf pan at 400F for 45 minutes.

Shave thin slices and sear on a griddle.

Warm the pan arabe.

Fill with pork, chipotle salsa, onion and lime.
