
Tacos de Tripa
Slow-cooked beef tripe finished on a searing griddle for the signature crisp edges of taqueria tacos.
Ingredients
- 2 lb cleaned beef tripe
- 1 onion, quartered
- 4 garlic cloves
- 2 bay leaves
- 1 tsp peppercorns
- 2 tbsp beef tallow
- Corn tortillas
- Onion, cilantro and salsa verde
Instructions

Rinse the tripe thoroughly and place in a pot with onion, garlic, bay and peppercorns.

Cover with water and simmer until tender, about 2 hours.

Drain, chop and crisp in tallow on a hot griddle.

Serve on doubled tortillas with onion, cilantro and salsa verde.
