
Tacos al Carbón
Smoke-kissed grilled steak tacos cooked directly over hot charcoal and finished simply with salsa.
Ingredients
- 2 lb skirt steak
- 1/4 cup lime juice
- 3 garlic cloves, minced
- 2 tbsp neutral oil
- 1 tsp ground cumin
- 1 tsp kosher salt
- Corn tortillas
- Grilled scallions
- Salsa roja
- Lime wedges
Instructions

Mix lime, garlic, oil, cumin and salt; marinate steak for 1 hour.

Prepare a very hot charcoal grill.

Grill steak 3 to 4 minutes per side and rest 10 minutes.

Slice across the grain and serve with tortillas, scallions, salsa and lime.
