
Tacos de Suadero
Mexico City-style brisket braised until silky, then crisped on the griddle for deeply savory tacos.
Ingredients
- 2 lb beef brisket or suadero
- 1/4 cup beef tallow
- 1 white onion, halved
- 4 garlic cloves
- 2 bay leaves
- 1 tsp black peppercorns
- 2 cups beef stock
- Corn tortillas
- Chopped onion and cilantro
- Lime wedges
Instructions

Season the beef generously with salt.

Brown it in tallow in a heavy pot.

Add onion, garlic, bay, peppercorns and stock; cover and braise at 325°F until tender.

Chop and crisp the meat on a hot griddle, then serve in warm tortillas with onion, cilantro and lime.
