
Tacos de Rajas
Roasted poblano strips simmered in cream with onion and corn.
Ingredients
- 6 poblano peppers
- 1 onion, thinly sliced
- 2 tbsp butter
- 1 cup corn kernels
- 3/4 cup Mexican crema
- 1 cup shredded Oaxaca cheese
- Salt
- Corn tortillas
Instructions
- 1
Char the poblanos over a flame or under the broiler until blackened.

Steam in a covered bowl 10 minutes, then peel, seed and slice into strips.

Saute the onion in butter until soft and golden.

Add the poblano strips and corn and cook 5 minutes.

Stir in the crema and cheese and simmer until creamy. Season.

Spoon into warm tortillas.
