
Roasted Cauliflower Tacos
Spice-roasted cauliflower with charred edges and a creamy chipotle drizzle.
Ingredients
- 1 large head cauliflower, cut into florets
- 3 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 cup vegan or regular crema
- 1 chipotle in adobo
- Corn tortillas, cabbage, cilantro, lime
Instructions

Heat the oven to 425F.

Toss the cauliflower with oil, chili powder, cumin, paprika and salt.

Roast 25 to 30 minutes, turning once, until deeply browned.

Blend the crema with the chipotle.

Serve on warm tortillas with cabbage, cilantro, lime and the chipotle drizzle.
