
Roasted Poblano and Corn Tacos
Sweet corn and roasted poblano strips in a light creamy sauce with fresh lime.
Ingredients
- 3 poblano peppers
- 2 cups corn kernels
- 1/2 white onion, sliced
- 1/3 cup Mexican crema
- 1/2 cup Oaxaca cheese
- Corn tortillas
- Cilantro and lime
Instructions

Roast poblanos until blackened, steam, peel and slice.

Sauté onion and corn until golden.

Add poblanos, crema and cheese and cook until creamy.

Serve in tortillas with cilantro and lime.
