
Black Bean and Sweet Potato Tacos
Sweet, smoky and filling — roasted sweet potato with cumin black beans.
Ingredients
- 2 large sweet potatoes, cubed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 can black beans, drained
- 1 clove garlic, minced
- Corn tortillas
- Avocado, cotija, cilantro, lime
Instructions

Heat the oven to 425F.

Toss the sweet potato with oil, paprika, cumin and salt and roast 25 minutes.

Warm the black beans with garlic and a splash of water, mashing lightly.

Warm the tortillas.

Layer beans then sweet potato, and top with avocado, cotija, cilantro and lime.
