
Chickpea Chorizo Tacos
Crumbled chickpeas spiced like Mexican chorizo for a smoky, satisfying plant-based filling.
Ingredients
- 2 cans chickpeas, drained
- 2 tbsp ancho chile powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tbsp apple cider vinegar
- 2 tbsp tomato paste
- Corn tortillas
- Avocado, onion and cilantro
Instructions

Roughly mash chickpeas, leaving plenty of texture.

Cook tomato paste and spices in oil until fragrant.

Add chickpeas and vinegar and sauté until browned and crumbly.

Serve in tortillas with avocado, onion and cilantro.
