
Lentil Walnut Taco Meat
Earthy lentils and toasted walnuts make a hearty, savory taco filling with plenty of texture.
Ingredients
- 2 cups cooked brown lentils
- 1 cup toasted walnuts
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- 2 tbsp tomato paste
- Corn tortillas
- Lettuce, tomato and salsa
Instructions

Pulse walnuts in a food processor until coarsely crumbled.

Sauté tomato paste and spices in a skillet.

Add lentils and walnuts and cook until dry and lightly crisp.

Spoon into tortillas and add lettuce, tomato and salsa.
