Most vegan al pastor fails for the same reason: the marinade is right but the texture and the char are missing. Fix those two things and the taco stands on its own.
Choose a base with structure
- Extra-firm tofu: press it hard for thirty minutes, then freeze and thaw once. Freezing creates pores that hold marinade and produce a meatier chew.
- Trumpet mushrooms: sliced lengthwise, they sear beautifully and have real bite.
- Seitan: the closest to shaved pork if you can find or make it.
- Jackfruit: best for shredded texture but too soft on its own; mix it with mushrooms.
The adobo
Same as the classic: rehydrated guajillo and ancho, achiote paste, garlic, cumin, oregano, clove, white vinegar, and pineapple juice. Add a teaspoon of smoked paprika and a splash of soy sauce; without animal fat you need extra smoke and salt to carry the flavor.
Getting the char
This is the step most recipes skip. Roast the marinated pieces at 425°F on a sheet pan for twenty minutes, then finish under the broiler or in a hot cast iron pan with a little oil until the edges blacken slightly. Char provides the bitterness that balances the sweet marinade.
Fat matters
Use more oil than feels necessary. Al pastor is a fatty taco, and plant proteins bring almost none of their own. Two tablespoons per pound during the final sear makes the difference.
Assembly
Warm corn tortillas, grilled pineapple, white onion, cilantro, salsa verde, lime. Skip the cheese and crema; the taco does not need them.
