
Grilled Veggie Tacos with Cotija
Charred zucchini, peppers and corn finished with salty cotija.
Ingredients
- 2 zucchini, sliced lengthwise
- 2 bell peppers, halved
- 1 red onion, thick sliced
- 2 ears corn
- 3 tbsp olive oil
- 1 tsp chili powder
- 1/2 cup crumbled cotija
- Corn tortillas, cilantro, lime
Instructions

Toss the vegetables with oil, chili powder and salt.

Grill over medium-high heat until charred, 4 to 6 minutes per side.

Cut the corn from the cob and chop the other vegetables.

Warm the tortillas.

Fill and top with cotija, cilantro and lime.
