
Salsa Roja
A smoky, medium-heat red table salsa built on dried and fresh chiles.
Ingredients
- 6 roma tomatoes
- 4 dried guajillo chiles
- 2 chiles de arbol
- 1/2 white onion
- 4 cloves garlic
- 1 tbsp vinegar
- Salt to taste
Instructions

Toast the dried chiles in a dry skillet 30 seconds per side, then soak 15 minutes.

Char the tomatoes, onion and garlic in the same skillet until blistered.

Blend everything with the vinegar and a little soaking liquid.

Season with salt and simmer 10 minutes to deepen the flavor.
