
Guajillo Salsa
A smooth brick-red salsa with the fruity warmth of toasted guajillo chiles and roasted tomato.
Ingredients
- 8 dried guajillo chiles
- 3 Roma tomatoes
- 2 garlic cloves
- 1/4 white onion
- 1 tbsp apple cider vinegar
- 1/2 tsp cumin
- Salt
Instructions

Stem and seed chiles, toast briefly, then soak in hot water 15 minutes.

Char tomatoes, garlic and onion.

Blend everything with vinegar, cumin and enough soaking water to flow.

Simmer 8 minutes, season with salt and cool.
