
Dairy-Free Taco Toppings
A cashew crema, quick pickles and crunchy slaw that make you forget the cheese and sour cream.
Ingredients
- 1 cup raw cashews, soaked 2 hours
- 1/2 cup water
- 2 tbsp lime juice
- 1 garlic clove
- 1/2 tsp salt
- 1 red onion, thinly sliced
- 1/2 cup vinegar
- 1 tsp sugar
- 2 cups shredded cabbage
- 1 avocado
- 2 tbsp toasted pepitas
Instructions

Blend soaked cashews with water, lime juice, garlic and salt until completely smooth to make the crema.

Thin with extra water until it drizzles, then chill.

Pack the sliced onion into a jar, cover with warm vinegar and sugar, and rest 30 minutes.

Toss cabbage with a spoonful of the pickling liquid for a fast slaw.

Mash the avocado with lime and salt for creaminess in place of cheese.

Set out the crema, pickles, slaw and pepitas so everyone builds their own.
