The Most Underrated Taco Toppings

Most tacos get the same three toppings: onion, cilantro, lime. They work. But a handful of overlooked additions can turn a good taco into a memorable one, mostly by adding acid, crunch or salt where the filling needs it.

Pickled red onion

Sharp, sweet and bright pink. Essential on cochinita pibil, excellent on anything rich or fatty. Ten minutes in lime juice and salt is enough.

Thin radish slices

Cool, peppery crunch that cuts through braised meat. Radishes sit on the counter at serious taquerías for a reason.

Cotija or queso fresco

Salty, crumbly cheese adds seasoning as much as dairy. A pinch on beans, vegetables or chorizo tacos lifts everything.

Charred scallions (cebollitas)

Grilled whole onions with lime and salt are the classic carne asada partner. Chop one into the taco itself and see what happens.

Crushed chicharrón

Fried pork skin crumbled on top gives crunch that survives salsa, unlike lettuce or cabbage.

Toasted peanuts or sesame

Borrowed from salsa macha, a scatter of toasted nuts adds texture and a roasted note that pairs beautifully with pork.

Cabbage, not lettuce

Shredded cabbage stays crisp under sauce and has a slight sweetness. It belongs on every fish taco and most fried ones.

Avocado salsa instead of plain avocado

Blending avocado with tomatillo, chile and lime gives you creaminess plus acid, which plain slices cannot do.

Pickled jalapeños and carrots

The jar on the counter. Vinegary heat that resets your palate between bites.

A second squeeze of lime

Most people under-lime. Acid is what makes fatty tacos feel light enough to eat a fourth one.

Building a topping strategy

Match the topping to what the filling lacks. Fatty filling needs acid. Soft filling needs crunch. Mild filling needs salt or heat. Once you think that way, you stop needing a recipe.
