
Cabeza Tacos
Steamed beef cheek, rich and gelatinous, served simply with onion and cilantro.
Ingredients
- 3 lb beef cheek
- 1 onion, quartered
- 6 cloves garlic
- 2 bay leaves
- 1 tbsp salt
- 1 tsp peppercorns
- Corn tortillas, onion, cilantro, lime
- Salsa verde
Instructions

Season the beef cheek generously with salt.

Place in a steamer or covered pot with onion, garlic, bay leaves and peppercorns and a little water.

Steam on low for 4 hours until meltingly tender.

Chop the meat coarsely.

Serve on warm tortillas with onion, cilantro, lime and salsa verde.
