Every taco filling has its moment, but some are simply better than others. Here are twenty, ranked from solid to transcendent, with a note on what each one does best.

20 to 16: dependable

  1. Ground beef. The weeknight standard. Fast, familiar, forgiving.
  2. Grilled chicken breast. Fine, lean, and easily dried out. Thighs would rank higher.
  3. Refried beans. Cheap, comforting, and a perfect supporting player.
  4. Roasted cauliflower. Charred edges do a lot of work here.
  5. Black bean and sweet potato. Sweet, earthy and genuinely satisfying.

15 to 11: very good

  1. Pollo asado. Marinated, grilled, and far better than plain chicken.
  2. Mushroom asada. Meaty, savory and the best vegan swap on most menus.

  3. Lengua. Beef tongue, slow-cooked to a texture nothing else matches.
  4. Cochinita pibil. Achiote and citrus pork with pickled onion.
  5. Carne asada. Charred, salty, and the taco most people default to for a reason.

5 to 1: life-changing

  1. Suadero. Silky, confited beef that tastes like nothing else on a griddle.
  2. Barbacoa. Pit-cooked, tender, clean and deeply savory.
  3. Carnitas. The crisp-and-tender contrast is unbeatable when done right.
  4. Birria. Chile depth plus consomé for dipping.
  5. Al pastor. Spit-roasted, chile-marinated pork with pineapple. Still the champion.
