Is Chipotle's "Taco" Even a Real Taco?

The question comes up constantly and it usually generates more heat than insight. Let us take it seriously for a minute.

The technical answer

A taco is a tortilla folded around a filling. By that definition, yes, a fast-casual taco is a taco. Anyone claiming otherwise is arguing about quality and tradition, not definition.

Where it diverges

  • Size: fast-casual tortillas are large, so the ratio favors filling volume over the tortilla.
  • Composition: rice and beans inside a taco is a burrito instinct, not a taqueria one.
  • Tortilla handling: tortillas are typically warmed in a press or steamer rather than charred on a comal.
  • Salsa: made in volume and standardized, so it lacks the sharpness of a salsa made that morning.

What fast-casual does well

Consistency, ingredient transparency, speed, and availability in places with no taqueria. For many people it is a reliable, decent lunch, and there is nothing shameful in that.

The authenticity trap

Authenticity arguments often smuggle in class judgment. Tex-Mex, Cal-Mex, and Tijuana-style are all regional adaptations that were once called inauthentic. Fast casual is a corporate adaptation, which makes it less interesting culturally, but the logic used to dismiss it has been used to dismiss real regional cuisines too.

The useful framing

Judge it as fast food, not as a taqueria taco. It is a fine version of what it is. Then go find a taqueria and eat something that costs less and tastes like more.

The verdict

It is a taco. It is just not a very good one, and that is a different complaint than the one people usually make.
