The American food truck boom is usually told as a story about chefs and social media. The real foundation was laid decades earlier by Mexican immigrant families running loncheras.
The lonchera era
Beginning in the 1970s, catering trucks known as loncheras served construction sites, garment districts, and farm crews in Southern California and Texas. They existed to feed workers quickly and cheaply, on routes timed to shift changes. The food was not marketed; it was necessary.
From route to parking spot
Over time some trucks stopped moving. A truck parked reliably at the same corner each night could build a neighborhood following, extend hours, and expand its menu beyond burritos to al pastor, suadero, and weekend specialties like birria.
Low barriers, high skill
Trucks required a fraction of the capital of a restaurant, which made them one of the few realistic paths to business ownership for families without credit history. That accessibility, not novelty, is what made the model spread.
Regulation and pushback
Growth brought conflict. Cities passed ordinances restricting parking duration, proximity to restaurants, and hours of operation, often after complaints from brick-and-mortar competitors. Vendors organized, sued, and in several cities won. Those fights created the permitting frameworks every food truck operates under today.
The boom that followed
When the gourmet food truck wave arrived in the late 2000s, it inherited infrastructure that immigrant vendors had built and legalized: commissary kitchens, mobile permits, and a public accustomed to eating well from a window.
Why it matters when you order
The truck at the corner is often a family business two or three generations deep. Ordering there is not slumming; it is buying from the people who invented the category.
