A seasonal menu that feels festive
- Birria or barbacoa. Rich, warming and made two days ahead.
- Cochinita pibil. Achiote and citrus pork with pickled red onion, and the color suits the season.
- Roasted squash and black bean. The vegetarian centerpiece, with cotija and pepitas.
- Chile-roasted turkey. The best possible use of leftovers, shredded with adobo and lime.

Pomegranate seeds with pork, toasted pepitas for crunch, pickled red onion for color, thin radish, cotija, and a bright green avocado salsa. Together they look like a holiday table without any novelty decoration.
Drinks
A pitcher of paloma, hibiscus agua fresca for non-drinkers, and Mexican hot chocolate or café de olla later in the evening. Micheladas work for a daytime gathering.
Dessert tacos
Cinnamon-sugar tortillas fried crisp, filled with fruit and cream, or with Nutella and banana. They take ten minutes and always get a reaction.
The hosting timeline
- Three days out: shop, make pickled onions.
- Two days out: braise the meats. Cool and refrigerate in their liquid.
- One day out: make salsas, roast vegetables, chop toppings.
- Party day, afternoon: reheat braises in slow cookers on low, set the table, fry dessert shells.
- Thirty minutes before: mash guacamole, warm tortillas in batches, pour the first pitcher.
Setting the table
Plates, tortillas, proteins, then toppings mild to spicy, limes last. Candles and a runner do more for the look than any themed decoration, and small plates keep the line moving.
