Squash tacos have a bad reputation because too many versions lean sweet. Treated like a savory vegetable and given real char, roasted squash makes one of the best autumn tacos there is.
Choose the right squash
- Butternut: the most reliable, sweet and dense, cubes hold their shape.
- Kabocha: drier and chestnut-like, the best flavor of the group.
- Delicata: edible skin, fast roasting, great in half-moons.
- Calabaza: traditional in Mexican cooking and worth seeking out.
Roast it properly
Cut into three-quarter-inch cubes, toss with oil, salt, cumin, smoked paprika, and a pinch of cinnamon, and roast at 425°F for 25 to 30 minutes without crowding the pan. You want browned edges, not steamed cubes. Finish with lime.
Balance the sweetness
Squash needs three counterweights: acid, salt, and heat. Add pickled red onions, crumbled cotija or feta, and a chipotle or chile de arbol salsa. Skip anything sweet like corn or honey; it tips the taco over.
Add texture
Toasted pepitas are the classic and essential move. Crisped chickpeas or fried chorizo also work if you want more substance.
