
Pickled Red Onions
Quick Yucatán-style onions turn vivid pink in a tangy lime and vinegar brine.
Ingredients
- 2 red onions, thinly sliced
- 1/2 cup lime juice
- 1/2 cup white vinegar
- 1 tbsp sugar
- 1 1/2 tsp salt
- 1/2 tsp black peppercorns
- 1/2 tsp Mexican oregano
Instructions

Pack onions into a heatproof jar.

Bring vinegar, sugar, salt, peppercorns and oregano to a simmer.

Pour over onions and add lime juice.

Cool, cover and refrigerate at least 1 hour before serving.
