
Copycat Del Taco Chicken Tacos
Peppery grilled chicken, soft flour tortillas, shredded cheddar and lettuce — the drive-thru favorite, cleaned up.
Ingredients
- 1 1/2 lb boneless chicken thighs
- 2 tbsp oil
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp cumin
- 1 tsp salt
- Juice of 1 lime
- 8 small flour tortillas
- 1 1/2 cups shredded cheddar
- 2 cups shredded lettuce
- Hot sauce to serve
Instructions

Toss chicken with oil, lime juice and all seasonings; rest 30 minutes.

Grill or pan-sear over medium-high heat 5-6 minutes per side until charred and cooked through.

Rest 5 minutes, then chop into small pieces.

Warm the tortillas in a dry skillet.

Fill with chicken, then top with cheddar and lettuce.

Finish with hot sauce.
