Corn vs. Flour Tortillas: Does It Matter?

Corn or flour is the first decision you make about a taco, and it changes everything that follows. Neither is objectively better, but they are genuinely different ingredients with different jobs.

How corn tortillas are made

Dried corn is cooked and steeped in an alkaline solution, a process called nixtamalization, then ground into masa and pressed into thin rounds. Nixtamalization is what gives corn tortillas their distinct aroma and makes the corn's nutrients more available. A good corn tortilla tastes like sweet toasted corn on its own.

How flour tortillas are made

Wheat flour, fat (traditionally lard), salt and water, kneaded, rested and rolled thin, then cooked quickly on a hot griddle. Flour tortillas arrived in northern Mexico where wheat grew well, and they define Sonoran and Tex-Mex cooking.

Flavor and texture

  • Corn: earthy, aromatic, slightly chewy, with a scent that fills a kitchen. It stands up to bold chiles and fatty braises.
  • Flour: soft, mild, faintly rich, and stretchy. It carries wet or creamy fillings without tearing.

Which to use when

  • Corn: pastor, carnitas, barbacoa, birria, carne asada street style, fish tacos, anything with a strong salsa.
  • Flour: breakfast tacos, cheesy fillings, Sonoran carne asada, anything you want to roll or hold in one hand for a while.

The practical differences

Corn tortillas are smaller, so tacos are typically doubled to prevent tearing. They are also gluten free. Flour tortillas are larger, sturdier and hold more, which is why they suit burritos and loaded breakfast tacos.

Buying advice

Read the ingredient list. A corn tortilla should be corn, water and lime, nothing else. A flour tortilla should have a real fat, not a long chemical list. Fresh tortillas from a local tortillería beat any supermarket brand.

Warming is non-negotiable

A cold tortilla ruins a great filling. Thirty seconds a side on a dry skillet, then straight into a cloth-lined bowl to steam. That one habit improves every taco you make.
