Baja-Style Beer-Battered Fish Tacos

The Ensenada classic: crisp beer-battered white fish, cabbage slaw, and crema on flour tortillas.

Ingredients

  • 1.5 lb cod or halibut, cut into strips
  • 1 cup flour
  • 1 tsp baking powder
  • 1 cup cold Mexican lager
  • 1 tsp salt
  • Oil for frying
  • 2 cups shredded cabbage
  • 1/2 cup Mexican crema
  • 2 tbsp lime juice
  • Flour or corn tortillas

Instructions

    Whisk flour, baking powder, salt and beer into a smooth batter and chill 15 minutes.

    Heat 2 inches of oil to 375F.

    Toss the cabbage with lime juice and a pinch of salt.

    Thin the crema with a little lime juice.

    Dip fish strips in batter and fry 3 to 4 minutes until golden.

    Drain, then serve on warm tortillas with slaw and crema.
