The Secret to Getting Restaurant-Style Char on Your Tortillas

The difference between a home taco and a taqueria taco is often just the tortilla. Restaurant tortillas are blistered, flexible, and smell like toasted corn. Here is how to get there on a home stove.

Use a dry, screaming-hot surface

A comal or cast iron skillet over medium-high heat, with no oil, is the whole trick. Test it with a drop of water: it should skitter and vanish in about a second. Nonstick pans never get hot enough and their coating will not survive it.

Time it in three flips

  1. Fifteen seconds on the first side to warm the surface.
  2. Flip and give it thirty to forty-five seconds until dark spots appear.
  3. Flip back for another fifteen seconds. Many tortillas will puff, which is a good sign.

Rest them in cloth

Stack cooked tortillas in a clean kitchen towel inside a bowl and cover. The trapped steam finishes softening them and keeps them warm through the meal. Skipping this makes tortillas leathery within two minutes.

Char over open flame, carefully

For gas ranges, finish a tortilla directly on the burner grate for five seconds a side with tongs. You want spots, not ash. Do one at a time and never walk away.

The fat option

Taquerias frequently brush tortillas with a little rendered fat or oil from the meat. It adds flavor and helps the tortilla resist tearing under wet fillings. A quarter teaspoon per tortilla is plenty.

Fixing bad tortillas

Older store-bought tortillas crack because they have dried out. Flick a few drops of water onto each side before heating and give them slightly longer on the comal. It will not match fresh masa, but it is a real improvement.
