
Tacos de Canasta
Basket tacos — pre-filled, oiled, and steamed soft in a cloth-lined basket.
Ingredients
- 24 corn tortillas
- 2 cups refried beans
- 2 cups shredded chicken or potato-chorizo
- 1/2 cup oil
- 2 tbsp guajillo chile paste
- Salt
- Pickled jalapenos and onion to serve
Instructions

Warm the fillings and season well.

Mix the oil with the chile paste and a pinch of salt.

Warm each tortilla, fill with 2 tbsp of filling and fold.

Brush the folded tacos with the chile oil.

Stack in a cloth-lined basket or covered container and let steam in their own heat for at least 1 hour.

Serve soft with pickled jalapenos and onion.
