
High-Protein Taco Meat for Meal Prep
Lean, boldly seasoned taco meat stretched with lentils — big protein, great texture, meal-prep friendly.
Ingredients
- 1 lb 93% lean ground turkey or beef
- 1 cup cooked lentils
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 cup tomato sauce
- 1/2 cup low-sodium broth
- 1 tbsp oil
Instructions

Heat oil and brown the meat over medium-high heat until well crumbled.

Add the spices and toast 30 seconds.

Stir in lentils, tomato sauce and broth.

Simmer 8-10 minutes until the liquid is absorbed and the mixture holds together.

Cool completely, then portion into four containers.

Refrigerate up to 4 days or freeze up to 3 months; reheat with a splash of water.
