Aguas Frescas: Horchata, Jamaica and Tamarindo

Three classic taqueria drinks to wash it all down.

Ingredients

  • Horchata: 1 cup rice, 1 cinnamon stick, 4 cups water, 1 can condensed milk
  • Jamaica: 1 cup dried hibiscus flowers, 8 cups water, 3/4 cup sugar
  • Tamarindo: 1/2 lb tamarind pods, 8 cups water, 3/4 cup sugar
  • Ice and lime to serve

Instructions

    Horchata: soak the rice and cinnamon in water overnight, blend, strain through cheesecloth, then sweeten with condensed milk.

    Jamaica: boil the hibiscus in 4 cups water 10 minutes, strain, stir in sugar and 4 cups cold water.

    Tamarindo: simmer the peeled pods 20 minutes, mash and strain out the seeds, then sweeten and dilute.

    Chill all three thoroughly and serve over ice.
