How to Build the Perfect Taco Bar for a Party

A taco bar is the easiest way to feed a crowd well, because guests assemble their own food and you can prepare almost everything in advance. The trick is quantities and layout.

How much food per person

  • Tortillas: 4 to 5 small corn per adult, plus 20 percent extra.
  • Protein: 5 to 6 ounces cooked weight per adult, across two or three options.
  • Beans and rice: half a cup each per person.
  • Salsa: about a quarter cup per person in total.
  • Cheese and crema: two tablespoons each per person.

Choose two or three fillings, not five

A crowd-pleasing set: one grilled (carne asada or pollo asado), one braised (carnitas or birria), and one vegetarian (mushroom asada, rajas or roasted sweet potato and black bean). Three is plenty and keeps the line moving.

The topping lineup

Diced white onion, chopped cilantro, shredded cabbage, pickled red onion, sliced radish, cotija, shredded cheese, crema, guacamole, lime wedges, and two salsas at different heat levels. Label the hot one clearly.

Layout that prevents a traffic jam

Plates, then tortillas, then proteins, then toppings from mild to spicy, then limes, then drinks at a separate table. Set the bar so guests can approach from both sides if the group is over fifteen.

Keeping everything hot

Slow cookers on warm hold braised meats beautifully. Grilled meats go into foil pans covered with foil. Tortillas stay in a towel-lined warmer, refilled in batches of twenty rather than all at once.

Make-ahead schedule

  • Two days out: braise the meat, make pickled onions.
  • One day out: make salsas, chop toppings, prep marinades.
  • Day of: grill, warm everything, mash guacamole an hour before.

Do not forget

Extra napkins, small plates rather than large ones (they encourage the right portion), and a bowl of chips to slow down early arrivals.

Drinks

Agua fresca and a pitcher of margaritas cover almost everyone. Michelada fixings are a nice touch for a daytime party.
